Baking again!!

That’s right, I am baking again!! This time I am making Blueberry Muffins!! I got this Stoneyfield recipe from Caitlin’s blog earlier this week and knew I just had to try them!! The recipe is healthier than most muffin recipes and you could also use half whole wheat flour if you wanted! I used regular flour because I don’t have whole wheat right now. Here’s how they turned out:

They are busting out of the muffin tin! Don’t they look delish?!? I haven’t tried one yet, am planning on having one for dessert tonight, so I will let ya’ll know how they are later! But, I’m sure they’re fab!!

Sadie also wanted to make a picture debut today so here she is!

This is her in the backyard, resting in the shade! She has been outside almost all day because the weather is so nice here!! I hope it stays like this!!

Today is an off day from running so I did a lot of walking! I took Sadie on a 1 mile walk and then walk/studied on the treadmill for 2.5 miles! I was almost sad that today was a rest day when I walked outside this morning and felt the slightest chill in the air! All I could think was, PERFECT RUNNING WEATHER! It better be like this tomorrow morning when I have a run planned!!

Tonight is another lazy night. I rented the movie The Knowing with Nicholas Cage in it.

Anyone ever seen it? It looks good, but a little freaky! Hope I don’t scare myself too bad! Well, I hope everyone is having a great Saturday!!

    The Knowing is pretty good! It's not scary, just a little creepy at times.

     
  2. Yummy! I like to use whole wheat pastry flower in recepies like that. It's not as dense as regular whole wheat. If you've never tried it you should. It's really yummy. I love blueberry muffins and blueberry pancakes. Yummy!!
