Carbo-licious Day!!

I have had a very carbo-licious day today!! I think this is mainly the result of me having very little in my refrigerator and pantry and desperately needing to go to the grocery store! I am going to start with a recipe I made last night for Cheesy Marinara Sauce. I like to buy store bought marinara sauce and kick it up a notch! So, here is my creation from last night, that turned out so good!!

Cheesy Marinara Sauce

1/2 jar store bought Marinara (you could make the whole thing if you want)

Fresh spinach, to taste

1/4 chopped onion

Dash of cayenne pepper

1/4 block reduced fat cream cheese

1 roma tomato, chopped

Start out by heating up your marinara sauce on on top of the stove on medium heat. Add your fresh spinach, I used a large handful.

Next, mix in chopped onion, cayenne pepper, and cream cheese.

Once cheese melts and spinach wilts, turn to low.

Meanwhile, cook your pasta of choice. Last night I made whole wheat penne!

Mix pasta and sauce. Top with chopped tomato. Enjoy!! This was delicious! I will be eating this for dinner again tonight!!

Continuing on with my carbo-licious day, I had oatmeal for breakfast!! Banana oatmeal with PB and coconut flakes on top! And by the way, I used frozen banana chunks in my oats since I didn’t have any fresh bananas and it worked great! Just like a normal fresh banana!!

And for lunch, another Panera bagel!! This time I had the whole grain one with Honey Walnut cream cheese and 2 Clementine's on the side! Only one more left (Gingerbread!!)

In between all these carbs, I did workout. It has been raining and storming here all day so I was stuck inside. I had originally planned on doing a 6 miler before I found out it was going to be stormy all day. I definitely wasn’t feeling the treadmill for 6 miles, so I decided to mix it up a bit! I am planning to start incorporating more strength training in after the holidays, so I thought I would try an at home boot camp, Bobbi style!! I warmed up running on the treadmill for 2 miles and then did whatever strength moves popped into my head for 15 minutes. By the end of my 35 minute workout I was drenched and breathing super heavy! The idea with the boot camp type workout is that you don’t stop and rest, you just move from one move to another and it really gets your heart rate up!!

This is right after I finished! Tired!! I will definitely being doing these a lot more often!!

I have been studying again, ALL DAY, for my last exam of the semester tomorrow! Yay!! My brain is done for the night so I plan on relaxing and watching TBL finale!! Love that show!! I hope ya’ll have a great night!!

  2. I've been thinking about incorporating some boot camps into my soon to be morning workouts and Bobbi has a few that interest me. It's a great way to burn some calories for sure. Nice job!

  3. Hey girl!

Oh my, Panera Bagels are my weakness in life. The Cinnamon Crunch with Hazelnutt Cream Cheese could quite possibily be the best thing I have ever eaten! ;)

I got those Bowls at Ross. Do you have that store? I LOVE it! It's like a Tj Maxx or Marshalls. Great adorable buys that are so reasonably priced.

Hope you have a great day!

  4. Yum, you are one cooking machine!!!!! And girl, you're inspiring me with all your healthy food.

Good luck with your test!!! :)
