Workout, Candy and Dinner

Hey bloggy friends! Yep, that’s right! 2 posts in one day!! I’m on a roll! I am sad to say that I took down all my Christmas decor this evening and put the tree out by the curb for the trash men to pick up. Makes me sad! My house looks so bare!!

I had a great workout today! I couldn’t decide between a bootcamp workout or running, so I did both! Here’s how it went:

1 mile run on the treadmill: warm-up

Bobbi’s 20 minute Bootcamp

1 mile run on the treadmill: cool down

This workout took me about 40 minutes and I was super tired by the end! My heart stayed pumping the entire time! I loved it!! Y’all should definitely try this one!!

I have so much candy in my house from Christmas. For some reason, my parents and fiancé think they need to buy me loads of candy. While I love candy, I just am so bad at controlling myself around it! Look at all this!

Luckily the fiancé is helping me eat it, but it’s going in the trash after New Years!!

We had another really good dinner tonight! Like last night’s recipe, I got this one from IGE also!! If you can’t tell by now, I love everything she makes!!

Crockpot Santa Fe Chicken

Ingredients:

1 can chicken broth

1 can diced tomatoes with green chilies

1 can black beans, drained & rinsed

8 oz frozen corn

3 green onions, sliced

1 teaspoon cumin

1 teaspoon dried cilantro

1 teaspoon garlic powder

1 teaspoon onion powder

3/4 teaspoon cayenne pepper (more or less to taste)

Salt, to taste

2 large chicken breasts, thawed (I used 3 for extra leftovers!)

Directions:

1. Combine all ingredients from chicken broth to salt in crock pot. Salt chicken breasts, lay on top of mixture and cook on low for 8 hours.

2. Remove chicken breasts and shred with two forks. Return shredded chicken to crock pot, stir to combine, taste and adjust seasonings.

3. Serve over cooked rice, or in tortillas. Top with more green onions, sour cream, cheese and fresh cilantro.

Once again, this recipe was amazing! The chicken was literally falling apart in the Crockpot! It was so moist and tender! Loved this!!
