MIA Monday

Hey y’all! Sorry I’ve been MIA today! I’ve been busy doing school stuff! I think my test went pretty well this morning, but I never really know what to think! Hopefully, we will be getting our grades around Thursday.

In anticipation of my early morning, I made overnight oats again!!

Last night I mixed up 1 Oikos blueberry Greek yogurt, 1/3 cup oats, and a couple splashes of milk to make it a bit thinner. Then I popped it in the fridge to chill overnight!

This morning I topped it with a mashed banana and some PB. It was awesome! Such a great texture!! I really think mashed bananas taste so much better than sliced! Crazy right?!

And some coffee in my special nurse mug that my Nana bought me when I graduated nursing school!!

We got out of class early today(!!), so I was able to relax a bit before lunch. I had kind of a random assortment of food for lunch:

I had leftover acorn squash (which is, by the way, just as good the next day!), 2 Clementine's, and an Arnold Thin with PB on one side and melted Swiss on the other! It was a very yummy lunch! I can’t say enough about how much I love acorn squash! I am so glad I have another one in my fridge!!

After lunch, I decided to do 30 minutes of yoga. I did 3 of Polly’s sessions: Yoga for Triathletes, Yoga for Healthy Shins and Knees, and Peace Joy Love Yoga. They were all awesome but I think I liked the Yoga for Triathletes best because it was the most challenging! After yoga, I did Whittle My Middle 2 and took Sadie on a mile walk. She has been DYING for a walk and luckily today it was in the 40’s!!

I read for school the majority of the afternoon and then decided to make Polly’s No Bake Cookies!! They look semi healthy and I’m sure taste delicious!! Here’s the recipe:

No Bake Cookies

1/2 c. brown sugar

1/4 c. butter

1/4 c. milk

1 tsp. vanilla

1/2 c. peanut butter

1 and 1/2 c. quick oats

Heat top 5 ingredients together until melty.

Then add oats.

Scoop into 12 clumps on cookie sheet (they will be sticky!) and put in fridge until set.

  Roll into balls and store in fridge.

Dinner was another fabulous creation that I made up!!

We had Lemon Garlic Baked Tilapia, Oven Baked Brussel Sprouts, and Cheesy Garlic Bread on Arnold’s Thins!

Roasted to perfection!! (400* for 30 minutes)

For the Tilapia, I just sprinkled it with garlic salt, cayenne pepper, and a few sprinkles of lemon juice. Topped with a dab of butter and cooked at 425* for 15 minutes! It was awesome!!

I have a happy tummy and am about to start watching The Bachelor! Anyone else watching this season? I’m mostly watching it for laughs because some of these girls are crazy! Ha! Hope you have a great night!!
