Overnight Oats Perfection!!

Good Morning!! I’m up early for class this morning :(  At least I will be home by lunch time!!

My poor little feet are still hurting from my run yesterday. My shoes sure did a number to them!! Dress shoes are not feeling so hot today, even my flats!! Can’t wait to get a new pair of running shoes this weekend!

In preparation for my early morning, I made Overnight Oats, yet again!! I am trying to perfect the “perfect” recipe and I think today’s is super close!!

Last night I mixed 1 Oikios Vanilla Greek yogurt, 1/3 cup oats, and 1/4 cup skim milk. I added more skim milk this time because I was looking for a creamier, less thick consistency.

This morning, I chopped up a honeycrisp apple, sprinkled it with cinnamon and a pinch of brown sugar, added about 1 TBSP H20 and microwaved it for 1 1/2 minutes, until the apple was soft. I topped my overnight oats with the apples and a dollop of PB!

This was awesome!! Much creamier with the milk added last night!! And the apples made it taste like apple pie!! Yum!! I’ve noticed that these Overnight Oats keep me full for quite a while, which is a SUPER good thing! Especially since I won’t get home from class until 12:30 or 1pm!! I am trying not to snack in the mornings since I am such an afternoon snacker! This leaves me with the need for a breakfast with awesome staying power!

Well, it’s Wednesday, we are halfway through the work/school week! Yeah!!

  1. I think I'm going to try it with an apple too!!! I had it this morning, and it was yummy..but I needed something else with it. An apple would be PERFECT. Thanks for the idea!!
