Happy Saturday!!

Let’s back up to last night…….

We weren’t able to go on our Valentine’s date last night due to the fiancé's work schedule :( So we will do it another night soon! I’m still super excited and am still keeping the restaurant a secret!!

So, I decided to make Individual Sandwich Thin Pizzas for dinner!!

First, get your Sandwich thin, and spread with pizza sauce or marinara sauce.

Top with toppings.

I used BBQ bakes Tofu, spinach, and some extra BBQ sauce.

Top with cheese! Bake for about 8 minutes on 400*

Look how melty and yummy these look!! Let me tell you, they tasted even better than they looked!! This is such a fun way to make pizza!!

I had a side salad also.

It contained:

  • Spinach
  • Romaine lettuce
  • Tomatoes
  • Kidney Beans
  • Roasted potatoes from the other night
  • Annie's Goddess Dressing

And for dessert, more cereal trail mix!!

Alright, back to this morning. My bed seemed extra comfy, which made it so hard to get up! Especially when I was getting up to run in 30* temps :(  I knew I really needed to run outside today, since I’ve been stuck on the treadmill all week, and tomorrow they are forecasting more rain and snow. So after laying in bed for about 30 minutes, I forced myself up! I got layered up and headed out for my 4 miler. It was super cold at the beginning and I just kept thinking how much I hate running in the cold!! Haha, but by the 2nd mile I had warmed up a bit. It was a hilly run and I was running hard, so it seemed tough, but I am happy with my time!!

  • 4 miles in 35:40
  • Avg pace 8:55!!!
  • Mile 1:9:17
  • Mile 2: 9:01
  • Mile 3: 8:55
  • Mile 4: 8:28

I think all this treadmill running has really helped increase my pace! I am totally loving it!!

I was super hungry after my shower so I went Back To Basics, and whipped up some regular stovetop Banana Oatmeal. I didn’t want anything fancy this morning, just a good old bowl of Banana Oatmeal!!

I used:

  • 1/3 cup oats, water, Almond Breeze
  • 1 small mashed banana
  • 1 tsp Flax
  • dash of cinnamon and almond extract
  • Toppings: a few blueberries and Cinnamon Raisin Swirl PB

It was so good!! Exactly what I wanted!! I have been missing the runny consistency of stovetop oats compared with baked oats!! Mmm, mmm, good!!

I’m still out of coffee so I made another home made Chai Tea Latte!!

  • Chai Spice Black Tea, steeped in H20 for 5 minutes
  • Splash of half and half
  • 1 tsp sugar

Delish!! Love this!!!

I have a lot of errands to do today!! Pick out hardwood and maybe carpet for our new floors, get my bridesmaid dress ordered for a wedding I’m in, buy a new blow-dryer(since mine blew up yesterday), and try to study some!! I;m excited that my mom is going to run errands with me!!
