Busy Little Bee

Hey bloggies! Sorry I was MIA yesterday, I just have a lot going on and didn’t have time to post! I’ve been a BUSY LITTLE BEE!! Let’s back up to yesterday…

I was excited to try out my new TJ’s Quick Cooking Steel Cut Oats!! I mixed together:

  • 1/4 cup Quick Cooking Steel Cut Oats
  • 1/2 cup Almond Milk
  • 1/4 cup H20
  • Dash of cinnamon and vanilla extract
  • 1 tsp ground flax
  • 1 mashed banana

Topped with some strawberries and 1 TBSP Barney Butter!! Thrown all together in my new Anthropologie bowl!!

So pretty!! Well, the Steel Cuts Oats came out really thick and I was not a fan. Y’all know I like my oats kinda liquidy. But don’t worry, I redeemed myself this morning! More on that later!

And of course I had to have my morning cup o’joe in my new Anthropologie coffee cup! Love this!!

I brought an orange with me as a snack during class. I think fruit is one of the best snacks around!! What’s your favorite fruit to eat as a snack?

When I got home from class I was starving, so lunch time it was!! I had 1/2 a can of Amy’s Alphabet Veggie soup…

A pear with some NM PB and a small slice of Quick Cornbread! Yum! Great lunch!!

I don’t know what it is about studying, but for some reason, I am always so snacky while studying or reading! Probably because I am bored! Haha!! So a couple hours and 1 nap later, I was ready for an afternoon snack!!

I had some Orange Black Tea and some cereal (Oh’s and Quaker Crack mixed together). And I definitely went back for a second helping of cereal! Just call me the cereal monster! I can’t get enough!

About an hour or so later, I decided I really needed to work out! I wasn’t in the running mood, plus I had just had a snack about an hour ago and that’s definitely not enough time for my tummy to digest before running!! So I walked on the treadmill for 2 miles (about 32 minutes) and did some upper body and ab strength training. I tried to read my school books while walking on the treadmill, but that lasted about 10 minutes. After that I turned the speed up and power walked the rest of the time while watching last Thursday’s Private Practice!!

After studying for a few more hours, it was time to make the fiancé and I dinner!!

My big roasted veggie plate!! Not sure what kind of squash this was, it was labeled Acorn but didn’t really look like and Acorn Squash and tasted very different than the other Acorn Squashes we have had! It was really good though!! I had some Squash, Zucchini, and Red Onion, all roasted at 400* for 30 minutes.

On the side, and for some protein, I had some Vegetarian Baked Beans. I love baked beans! Yum!!

I went to bed super early last night because I was exhausted! I feel like I’m just go go go all the time!!

I got to sleep in until about 7am this morning! That was nice. I got up, got ready, and headed to the kitchen to try my hand at the Steel Cut Oats again!! This time I had success!! In today’s mixture, I combined:

  • 1/4 cup Steel Cut Oats
  • 1/2 cup Almond Milk
  • 1/2 cup H2O
  • Dash of Almond extract and cinnamon
  • 1 mashed banana
  • 1 tsp ground flax

I think the key to today’s success was adding more liquid and cooking it on LOW instead of MEDIUM after it came to a boil!! It was just the perfect consistency and I loved the Steel Cut Oats! Such a different texture than regular oats!

I topped my bowl with strawberries and some Cinnamon Raisin Swirl PB. Nom, nom, nom!! I love strawberries and this pack was a super sweet one!! I’m pretty excited for an upcoming OIAJ morning since my Cinnamon Raisin Swirl PB is just about gone!!

I also had the last of my Fresh Market Crème Brulee coffee :(  It was a good one, I will have to buy this flavor again!!

I have such a crazy, hectic week ahead! Ahhh! So much going on!! I just had a contractor come and measure for my wood flooring, so hopefully he will give me a better estimate than the last one who said it was going to be $7000!! Luckily, he works with my Insurance Company, so he should be right on. I have 3 tests this week, tomorrow being the worst one ever. It’s pretty much an impossible test and I will be lucky if I answer 5 questions right. I’m serious too. Then, I have to squeeze 2 more online tests in, go to Arkansas to deal with my wedding dress issue, and have the plumbers come bust up my floors and fix my plumbing. Sounds like a fun week, right? No! Not sure when or how I will be fitting running/workouts in which is frustrating because they always make me feel better. Ahhh… I digress.

Well, I must start studying for the day! I will hopefully be back tonight with the rest of my eats! Have a GREAT day!!

Does anyone else feel like there’s just not enough time in the day??

  1. Ugh you are busy! I feel like there is never enough time in the day. Good luck with all your test! Will the flooring and dress issues you are still managing to eat really well! You should be proud of yourself! I always feel like when I get stressed or super busy I turn to crap food.

     
  2. So glad you redeemed the SCO!!! I eat them every single morning for breakfast with cinnamon and apple mixed in. I use the same mixture...1/4 cup oats, 1/2 cup water, and 1/2 cup milk and cook it on low. I LOVE them.
