Nacho AVERAGE Nachos!!

Isn’t my title super creative? Haha, I’m such a nerd :) I really lack any creative bone in my body so when I came up with this title for tonight’s post while I was walking Sadie, I was so proud of myself! Haha!!

Let’s first start with today’s run. I had 6 miles on the schedule. I was a little worried about ice on the sidewalks and there actually was quite a bit! Luckily I never fell or busted my butt!! It was more crunchy than slippery so I was able to slowly run over the ice spots. Either way, it was a GREAT run!! It felt tough and I was getting a little frustrated a couple miles in, but I realized why it felt tough when I checked my mile paces! Average pace of 9:03!! Wow, I was movin!! No wonder it felt hard!! I did a hilly 6 miles in 54:17, which is my fastest 6 miler to date!! That’s 42 seconds faster than my NYE 6 miler!! I am seriously so impressed and happy with myself!! Here are my mile splits:

  • Mile 1: 9:31
  • Mile 2: 9:31
  • Mile 3: 9:10
  • Mile 4: 8:38
  • Mile 5: 8:54
  • Mile 6: 8:34

All I can say is WOW!! After my run, I took Sadie on a 1 mile walk where I brainstormed my awesome lunch and creative post title!! Haha!!

So onto lunch!! I took a cue from Lauren’s dinner last night, and made some Nachos!! And they were Nacho Average Nachos! Ha!

First, layer your dish with your favorite tortilla chips. Of course I used the Jalapeno Scoops!! Make sure you eat a couple while you work :)

Next, layer your toppings on top of chips. I used chopped tomato, spinach, onion, corn, jalapenos, and a little leftover taco meat from last night.

Top with whatever cheese your little heart desires!! I used shredded sharp cheddar.

Bake at 350* for 15 minutes!! Perfection!!

Topped with a dollop of light sour cream and Taco Bell hot sauce!! Y’all this was one of the BEST LUNCHES EVER!! Yum!! It was so ooey gooey and messy, a fork was definitely required!!

I also had an orange on the side. I love oranges!! I must buy them more frequently!! I hate peeling them though! Do y’all have any orange peeling tips??

My body was super tired this afternoon so I did a bunch of blog reading and a little school reading! Haha :)  Seriously, my Physiology book makes me want to poke my eyes out! I can only take a little bit at a time!

Snack was my usual combo:

1/2 cup Quaker oat squares and 1/2 TBSP each of PB and Chocolate chips. Also, Chai Spice Black Tea with a splash of skim milk. Yum!!

And dinner tonight was Pork Chops and Brussels!!

I took 2 Boneless pork chops and seasoned them with Chili Seasoning, Garlic Salt, and Pepper. Cooked on medium heat in EVOO for about 8 minutes each side. Then slathered on my favorite BBQ sauce and cooked 1 more minute each side.

I also roasted some brussel sprouts in EVOO, salt, and pepper at 400* for 30 minutes. I ended up dipping my brussels in ketchup! Took them to a whole new level! If you haven’t tried it, you must!! I also had a biscuit on the side! Love me some biscuits!!

Random wedding question: Are you supposed to invite your out of town friends and relatives to your bridal shower even through most of them probably won’t come??

I am currently watching American Idol so I better get back to it! As usual, cookies will be dessert tonight so y’all can picture those in your heads! Goodnight!!

  3. My mom said the rule of thumb is to invite people to showers who you're inviting to your wedding..however, I'm throwing my sister a shower in a few weeks, and her wedding is in Seattle. They're only inviting 75 guests but I'm inviting all of the same family friends we invited to my showers and weddings. So I guess an out-of-town wedding is a slightly different circumstance!!
