Samoas!!

Hey guys! Hope y’all have had a wonderful day! It was so nice here and I made sure to spend some quality time outside!!

After church, I came home and made some lunch!!

Leftover pizza from last night and a pear.

020

Yum! Love leftover pizza!!

And look what my mom had waiting for me today!!

022

Samoas!! My absolute favorite Girl Scout Cookie!! What’s your fave??

023

Of course I had to immediately break into them and have 2 for dessert!!

After studying and digesting a bit, I decided it was too pretty outside to not go on a run! Even though it was my rest day, I decided to go for it!! I left my Garmin behind so I could have a nice, easy run! And that I did! I ran a 2.5 mile loop and it was awesome! I love my Garmie but it sure is freeing to not constantly be reminded of your pace! I’m going to have to run Garmie-less more often!! After my 2.5 mile loop, I swung by my house and picked up Sadie!! We ran another mile together and then walked a mile! I am so impressed at how my puppy did running!! Normally she is awful because she is led by her nose and stops at every mailbox to sniff! But not today! She maybe stopped once for a quick sniff the entire mile of running!! She definitely made up for it on our walking mile. Sniff, sniff, sniff everywhere! Haha. I will definitely bringing my pup running with me more often! I think she liked it. She has been passed out since we got home too! Haha.

I was really craving a Green Monster after my run, so that’s exactly what I made!!

024

Into the blender:

  • 2 huge handfuls of spinach
  • 1/4 cup Kefir (could use any type of milk or yogurt)
  • 1/2 cup water
  • 1/2 frozen banana
  • a couple frozen mango chunks
  • a few ice cubes

025

All blended up! I stole the fiancé's beer glass! hehe :)

026

027

If you have never had a Green Monster before, you need to change that! You definitely can’t taste the spinach at all! It’s a great way to get your greens in!! And it tastes delicious too!!

028

I also had some Kashi H2H cereal for some crunch.

Dinner:

I was feeling like I needed some veggies so I made a huge salad!

031

030

Sorry for the dark pictures! Guess I needed more light!! In this salad:

  • spinach
  • leftover roasted parsnips, carrots, and butternut squash
  • snap peas
  • cucs
  • tomato
  • red onion
  • jalapenos
  • pickles
  • raisins
  • shredded cheddar
  • Annie’s Goddess Dressing

032

And some chips and salsa on the side!!

029

I still was a tad hungry after eating this and was totally craving chocolate, so I headed straight to dessert!!

033

Trail mix!! Kashi H2H, peanuts, raisins, chocolate chips, and 1 Samoa on top! Perfect!!

034

Now I’m nice and full and my sweet tooth is satisfied!!

Off to catch up on blogs, cuddle with my pup, and read my new Runners World magazine! Have a GREAT night!!
