Beautiful Day
Happy Sunday morning to ya! It’s another beautiful day here! I think the high is around 68* today! Wohoo!! Bring on the warm weather! Backing up to yesterday…
I took a study break around 11:30am to go outside in the beautiful weather and RUN! And, I had a glorious run!! It was about 53* and sunny, not a cloud in the sky! Gorg! It felt so good to feel the sun on my face! I wore capris and a sort sleeve t-shirt, and by the end was wishing I had on shorts!! I took my favorite hilly 4 mile route and had planned on taking it slow and just enjoying this run. Well, my body thought otherwise! I kept pushing it more and more every mile and ended up doing 4 miles in 36:58 with an average pace of 9:15/mile! Go me!! Here are my splits:
Mile 1: 9:31
Mile 2: 9:17
Mile 3: 9:14
Mile 4: 8:56
It felt so good to run outside and to run HARD! After my run I took Sadie on a 1 mile walk, and ended up taking her on another one later! It was just too pretty to be inside! She’s a lucky pup! 2 walks in one day! Haha. By the time I got home from Sadie’s walk, I was hungry!!
Lunch:
I’ve been on a nacho kick lately! I was really wanting tome BBQ Chicken Nachos, but seeing as I can’t eat meat, I had to forgo the chicken part! Fine by me!! I layered tortilla chips, black beans, leftover butternut squash, carrots, parsnips, and jalapenos. Topped with some Country Bob’s BBQ sauce and a little Texas Pete’s!! And of course cheese! What would nachos be without cheese, right?! These turned out soooo good!!
With some pear and Barney Butter on the side!
And a few chocolate chips and raisins for dessert!

The rest of my afternoon contained studying and a trip to the grocery store! My how I love the grocery store! I could spend hours (and lots of $$) in there!! I think it’s just so fun! Y’all probably think I’m nuts :)
Snack:
I had an awesome snack this afternoon! Genius I say!!
I had some Kefir topped with some crushed pineapples, a sprinkle of PB granola, and 1/2 of a Healthy Carrot Cake Muffin crumbled on top! Amazing combo!!
Dinner:
Pizza was on the menu! I was really wanting just a plain old cheese pizza, but of course I had to throw in a few veggies!!
I used the Bertolli Arrabbiata Sauce that I got from the Foodbuzz Tastemakers Program for my pizza base! I really like this sauce a lot! Has a great, spicy tomato kick to it! Y’all know how much I love anything spicy!!
Boboli Thin crust topped with Arrabbiata Sauce, spinach, red onion, jalapeno, Mozzarella, and Cheddar cheese!!
All cooked up! How great does that look?!?!
My plate. I had 3 slices(plus on more!) and an orange!
Delish! I love pizza! Literally could eat it everyday and NOT get tired of it!!
And dessert was a little random!
I picked up some more Cinnamon Raisin Swirl PB at the store so I had a spoonful of that! Yum!!
And some more raisins and chocolate chips! I love this combo!!

Back to this beautiful Sunday morning!! Sadie woke me up around 6:15, which was good because I had a lot to do before I head to church!! I got up and got ready, did my Bible study, made breakfast, and now I’m blogging!! Breakfast was a good one!
Banana Oatmeal (only used 1/2 a banana) with some Plain Greek yogurt mixed in at the end. Topped with some super sweet strawberries and Cinnamon Raisin Swirl PB!! Hazelnut coffee on the side in my favorite mug!
So yummy!!

I got some Stoneyfield today..my overnight oats tonight will have: plain yogurt, oats, a mashed banana, and cinnamon. Totally pure! :)
Ooo, what a great idea for the pasta sauce! I've been wondering what to do with mine...

I'm a little late commenting on this, but that pizza looks delicious! I always think I should make my own pizzas but I never do it, and this post really makes me wanna get cooking!
