A Little Color
Good evening!! I have had a fabulous day today! What about you?
My morning started out with a delicious bowl of what else…OATS!!
This morning, I made Banana Oatmeal with 1/2 a banana, 1 TBSP cottage cheese (stirred in at the end), 1 TBSP crushed pineapple, and topped with strawberries and 1 TBSP of Cinnamon Raisin Swirl PB. It was divine! Loved the cottage cheese and crushed pineapple addition!!
For snack during class, I brought:
1/2 of a White Chocolate Macadamia Nut Clif Bar and some strawberries (that I saved for lunch). I think this flavor Clif bar is my absolute fave! Tastes just like cookie dough!
I got home from class early, so I thought I would go for a run in the beautiful sunshine! It was around 70 degrees when I headed out!! I headed out for a hilly 4 miler and felt pretty tired. No wonder, since this is my 5th day in a row of running! I just cn’t help it, the weather is too nice. My legs are begging for a break though! I felt like I was going SUPER slow but when I finished my 4 miles and checked my pace, it was actually a 9:36/mile pace! WOW! Since when is that pace slow for me?!? Crazy! I ran inside and picked up Sadie and we ran another mile for a total of 5 miles for me and then finished with a mile of walking. She totally digs running with me! I can tell by her smile :) Another plus for the day… I got a little color! Yay! Bad for my wedding dress though. Sports Bra tans are not flattering with a backless dress! Ha!
Luckily, for my legs, it’s supposed to rain tomorrow so I guess it will be an off day from running!
Lunch was made pretty quickly after we finished our run and walk!
Another random plate!! Cinnamon Raisin English Muffin with light cream cheese, strawberries and pineapples, pickles, and a Green Monster!!
Sweet and salty and just rrrright!!
I am officially re-addicted to Green Monsters! They are especially wonderful after a run!! Today’s mix included:
- 1/4 cup Soymilk
- 1/2 cup water
- 2 huge handfuls spinach
- frozen mango
- 1/2 frozen banana
- a few ice cubes
Mmmm so refreshing!!
And of course, some Samoas for dessert! I really need to lay off these!
I did have some chips and salsa/guac for a snack.
I spent the rest of the afternoon TRYING to study. I wasn’t very motivated at all! 90210 reruns were keeping me occupied instead! Haha. I finally pulled myself away from 90210 and studied while I walked on the treadmill for an hour, a total of 3 miles. So today included 5 miles of running and 4 miles of walking! Go me! Don’t worry, I think I ate enough Samoas today to cancel that calorie burn! Haha.

Another random creation!
I had some veggies(butternut squash, parsnips, carrots, asparagus) with ketchup and some brown rice with roasted chickpeas!!

To make these roasted chickpeas, I drained 1 can chickpeas and coated them in EVOO, Texas Pete’s, cayenne pepper, and garlic salt. Roast them at 350 degrees for 30 minutes. These were awesome! Got a nice little crunch to them! Yum! I will be making these again and again!!
And for dessert, strawberries, chocolate chips, and a Samoa(or 2 or 3)! Ahhh! Can’t keep away from the Samoas!! Now I’m stuffed!
I’m watching The Bachelor Wedding show and I can’t wait until my wedding! A little more than 3 months and it can’t come sooner!! I wish we could get married tomorrow :)
