Baking Success and Fail
Hey guys! Hope y’all have been having a good Valentine’s Day! I know we have!! The fiancé surprised me with a box of chocolates! That was super sweet of him! We had said we weren’t getting each other gifts, but I will definitely accept a box of chocolates! Haha! He knows how to speak to my heart :)

Since my legs muscles were so sore today from my crazy treadmill incline walking workout on Friday, I decided yoga was definitely in order! So I went to my favorite yoga instructor, Polly! I did 4 sessions, which was about 40 minutes worth. And by the time I was finished, I felt awesome!! So stretched out and flexible! I love that feeling!! The videos I did were: Yoga for Triathletes, Yoga for Arms, Yoga for Upper Thighs, and Winter Morning Yoga. I think my favorite today would have to be the Yoga for Upper Thighs!! It was tough!! I like tough with yoga!!

I was excited to use all the new veggies I bought at the store yesterday and made a HUGE salad!!
This salad was so good!! It contained:
- Romaine lettuce
- Spinach
- Tomatoes
- Cucumbers
- Sweet Peppers
- Leftover Roasted Potatoes
- Red Onion
- Jalapenos
- Raisins
- Feta Cheese
- Annie’s Goddess Dressing

They are like mini sweet peppers! And they taste so good!!
I also had half a Sandwich Thin with some Barney Butter. Mmm mmm good!

I decided baking was in order for this afternoon! Wanted to make my sweetie some sweet treats!! I saw a really yummy looking cookie recipe on IGE the other day: Chocolate Chewies! This was a BIG FAIL!! Not sure what I did wrong. Maybe I didn’t beat the batter enough or maybe I baked them too long but these cookies came out hard and sticky. Definitely not edible. So sad because they looked so good!! Maybe I will retry them soon!
After my fail, I felt like I really needed to redeem myself. So I whipped up my favorite go to cookie recipe: All Time Favorite Chocolate Chip Cookies!! I did try to healthify them a bit too!! I used 1/2 Whole Wheat flour, flax eggs instead of real eggs, and cut out 1/4 cup sugar. The cookie dough sure tasted good!! I seriously couldn’t stop eating it. I probably ate 3-4 cookies worth of dough and then my tummy was not happy.
The fiancé liked them and he had no clue I made any modifications!! That’s a good sign!! I will definitely be having one or two for dessert!!

I felt kinda yucky after eating all that cookie dough, so I decided a little strength workout would help!!
- 3X20 Military Press with 5lbs
- 3X20 Tricep Kickbacks with 5lbs
- 3X15 Front Raises with 5 lbs
- 3X20 Fly’s with 5 lbs
- 3X20 Bicep Curls with 8 lbs
- This took me about 18 minutes and my arms were screaming!! Felt great!!

And on to our Valentine’s dinner! It was nothing fancy, but sure was good!!
I had BBQ Tofu (the fiancé had BBQ Chicken), a baked sweet potato with a little butter, and some Pearled Couscous (AKA Israeli Couscous I think).
Everything was great! I especially loved these Pearled Couscous. More like chewy pasta balls than rice! Loved the texture!!
And I will be having some cookies for dessert while watching the Olympics :)

Have you guys been watching The Olympics at all? I’m loving them!! Been watching on and off all day!! I am really excited for the ice skating tonight! That’s one of my favorites!!

There’s a chance of snow tonight, but I’m hoping we don’t get any! I am so sick of winter weather!! Have a great night!

Happy Valentines Day! So sweet of your man to get you something small. Salad looks really good!
Smart o do some yoga. I really should start doing that too!
Come to my house and cook all of this stuff for me!! I love to cook and do almost every night, but not nearly as healthy as you!
Mmmm that all looks good. Now I want a cookies BAD.
That salad looked awesome! Your so good, I would have totally blown off a workout after cookie dough.
