Go Apolo!!
Happy Friday!! I am so happy it’s the weekend! I definitely need a brain break from class! We always have to think WAY too hard on Fridays!!
Let’s back up to this morning… I woke up at 5am to get in a 4 miler before class. I did my usual 5-4-3-2-1 Fartleck run but it felt extra hard today and I was sweating bullets!! I think I was pretty dehydrated from not drinking nearly enough yesterday! Amazing how much that makes a difference in my running!! But, I made it through my 4 miler (while watching this weeks 24)!!
After getting showering and getting ready, it was time for breakfast and my tummy was growling!! I mixed it up a bit this morning and had a big bowl of cereal.
In the mix:
- The rest of my Oh’s (~3/4 cup)
- Kashi H2H 1/2 cup
- 1 banana, sliced
- 3/4 cup nonfat milk
Yum! I forgot how much I love cold cereal! It tastes so good, just doesn’t hold me over very long :(
I also had more Hazelnut coffee in my VERY favorite mug!
For snack during class, I brought a Grapefruit!!
I peeled it like an orange! Love the pretty pinkness of it!
It was kinda sour, but very good!

I didn’t get home from school until about 1:30pm and I was beyond STARVING. To the point that I thought I was going to pass out from hunger!! I immediately grabbed a few chips and salsa while I decided what to make for lunch!
After staring into the fridge for a few minutes, I knew exactly what I wanted. A VEGGIE SCRAMBLE!
For my veggie scramble., I mixed:
- 2 eggs
- Spinach
- Chopped Onion
- Chopped Sweet Pepper
- Chopped Tomato
- Black Beans
Scramble everything up and top with some shredded cheddar and a lot of Texas Pete Hot Sauce! I am usually a ketchup and eggs kinda girl but I have recently fallen in love with Texas Pete Hot Sauce!!
I also had the rest of my leftover Roasted Acorn Squash with ketchup. Perfect lunch combo!!
And a brownie for dessert :)

I spent the rest of the afternoon working on a take home test for school and cleaning up my house so the plumbers can come bust up my floors tomorrow and fix my pipes. Glad it will be finished tomorrow. I am also going to Low’s In Arkansas to figure out my wedding dress situation. Wish me luck!
I headed over to my parents house this evening. I am spending the night there since we have to leave for Arkansas super early.
My lunch kept me pretty full all afternoon, but I did have a few pretzels while making dinner.
My mom was cooking Chicken and Dumplings for dinner (my fave) but I couldn’t have any since I’m not eating meat right now. So sad :( So, I made myself some pasta!!
Barilla WW Penne with some Creamy Tomato Sauce!! I added a different variety of veggies in my sauce tonight!! It contained:
- Onion
- Garlic
- Chopped Onion
- Chopped Bell pepper
- Chopped Broccoli
Loved the Broccoli addition! I will have to remember that one!!
One the side I had a fruit cup.
Now all together
And for dessert, some Chocolate Chip Cookie Dough Ice Cream! Yum!!

I am currently watching The Olympics and waiting for Apolo Ohno to win the Gold in short track!! Go Apolo!!
I don’t know what I’m gonna do when The Olympics are over! My nights will be so open! Haha!!
What are your plans for the weekend?? I already told y’all about my day tomorrow so hopefully Sunday will be more relaxing!!

Very impressive that you got up so early to run. Nice job!
I love grapefruits and I peel them like oranges too.
Hope the house stuff goes smoothly and you get your wedding dress issue figured out.
I'm not really into the Olympics this time... don't know why.
