Successful Day
Hey guys! How has your Saturday been?? Mine’s been pretty productive! I feel like I got a lot of studying done plus a run and some grocery shopping! All in all, a successful day!!
Around noon, I ran an easy 3 miles on the treadmill. I didn’t push myself too hard since tomorrow is my long run. I enjoyed some of DVR shows as I ran! After my run I took Sadie on a walk and it was FREEZING outside! Plus the wind was blowing SO HARD!

When Sadie and I got back from our walk, I was ready for lunch! I made a really yummy and nutritious lunch today!!
I spread some Sabra Roasted Red Pepper Hummus on one side of a sandwich thin and topped it with some sliced sharp cheddar cheese, cucs, tomato, onion, and lettuce! Great combo of veggies!! Love the hummus on the Sammie too!!
I also had a sliced pear and some Tostitos Hint of Jalapeno Scoops, which are seriously my new favorite chips!!

After grocery shopping, I took a study break to watch the end of the Memphis-Gonzaga game. It was a good one, but sadly, Memphis lost :(
I enjoyed my usual snack as I watched.

I was definitely in the mood for pizza tonight!! I mean, when am I not in the mood for pizza?!?
I started off with a Boboli crust and topped it with marinara sauce, broccoli, yellow bell pepper, onion, jalapenos, tomatoes, pineapple, and some pepperoni on the fiancé's side.
Then I topped my side with a little cheddar cheese and the fiancé's side with mozzarella and cheddar.
All baked up!! Yum, yum!!
My plate. I had 2 slices of pizza and a side salad with some new dressing I picked up at the store today.
Have y’all tried this Greek Goddess dressing? It’s pretty tasty and a little definitely goes a long way!
The pizza was good, but a little soggy. I’m guessing from the tomatoes. Will be leaving those off next time!!
A very good dinner!!!
I was feeling like some dessert so I had a yogurt parfait!!
I mixed a few scoops of Vanilla yogurt, 1/4 cup Pumpkin Granola, and a scoop of Cinnamon Raisin Swirl PB (more on that tomorrow)!!
What a great mixture! I loved this! I will definitely be recreating this again!!

I accidentally took a little slice out of my finger tonight while chopping veggies. I always do that! Like seriously, it’s a once a week occurrence! But tonight I sliced it pretty good and it took forever to stop bleeding! I have gone through like 4 band aids!! Any good chopping tips? I just started doing in when I got my new, super sharp knife and now I do it all the time!!
Well y’all, time to call it a night! Good night!

Great job getting all your studying in AND running AND shopping AND still eating healthy! I forgot to tell you that your veggie sandwich inspired me to do the same. I had cucumbers, cheese on thins. Melted the cheese. Yummy cucumber sandwich!
that pizza looked like a veggies delight! If you move the hand you use to hold the knife up a little bit, you will have more control over the knife. Also, your the opposite hand on top of the blade to guide it down. that's all I got. GOOD luck and stop cutting yourself!
