We Love Snow!!
Good evening!! I hope y’all had a wonderful day! I know I did! Surprise Snow Days are the BEST!!
After Breakfast this morning, Sadie and I cuddled on the couch and caught up on blogs and DVR shows! It was a nice way to spend a few hours!! I finally managed to get my butt off the couch to do a workout! I decided to do the Arm Circuit Workout #1 and followed that up with Polly’s Yoga For Yummy Abs! This is my favorite yoga video by far!! My abs were screaming by the end!! I know my arms are gonna be sore tomorrow too!!
After my workout, Sadie asked me to go play out in the snow with her! So I put on some snow clothes and we headed outside!!
Sorry for the squinty face but it was sleeting on us as we played outside!

Must have heard something! Or just doesn’t want to look at the camera! Ha!

I got the fun idea thanks to a tweet by Melissa, to take pics of my ring in the snow!!
Makes it all sparkly looking!!
And on my finger! Don’t think I’ve posted a picture of my ring?!? So I thought today was a good time to do so!!

So after our fun in the snow, we came in and were STARVING!! Time for lunch!! I definitely wanted something warm!! So I heated up some Chicken Chili!!
With some shredded cheddar and a spoonful of plain, nonfat Greek yogurt!
I also had a small slice of cornbread and a bowl of pineapples and blueberries.
Yum! Great fruit combo!! This lunch definitely hit the spot!!

The rest of the afternoon consisted of blog reading, more catching up on the DVR, and some studying. I did have an afternoon snack at some point!
I had some of these Buffalo Wing Pretzel Crisps! These are awesome!!
I also threw in some Quaker Crack! Weird combo, I know! But it was yummy!! Salty and sweet!
And also a little Black Tea with a tiny bit of sugar!!

Dinner tonight was inspired by my FIRST goodie I received from the Foodbuzz Tastemakers Program!!
Kikkoman Ponzu Lime!! It is very yummy tasting!! It can be used as a marinade, dressing, or dipping sauce!! I decided to use it as a marinade tonight!!
I made chicken for the fiancé and tofu for me!! For the chicken, I started out by cutting up 1 chicken breast into chunks.
I then mixed up about 1/2 cup Kikkoman Ponzu Lime, a few splashes of lemon juice, and a few cloves of minced garlic.
I mixed it all up, then let it marinate about 30 minutes.
Moving onto the tofu… I used 1/2 a block of tofu and pressed it between 2 plates for about 15 minutes to get some of the water out of it.
Then, I cubed up the tofu into bite size pieces.
Next, I mixed the same ingredients as above(Ponzu Lime, lemon juice, and garlic) and let the tofu marinate for about 15 minutes.
I then placed it on a baking sheet with some chopped sweet potato and cooked everything on 400* for 30 minutes.
Back to the chicken… Coat a skillet with EVOO and turn on medium. Place chicken and chopped onion and bell pepper into skillet.
Cook for about 15-20 minutes until chicken is cooked.
The fiancé ate his chicken and veggies in a tortilla, sort of like fajitas!! He said it was very good!!
I decided to make a “Bowl of Everything”!
I layered some Brown and Wild rice, some cooked spinach, some cooked onion and bell pepper, tofu, and sweet potato. It was such a GREAT combo!! I can’t tell you how good the marinade for the tofu was!! Kikkoman Ponzu Lime will definitely be used again!!
We also had some Tostitos Hint of Jalapeno Scoops and some Rotel the fiancé made today!! Yum, yum!!

I am excited to watch The Bachelor tonight! I believe it is hometown visits tonight! Speaking of that, I better start watching it!! I think we are still supposed to get some more sleet/snow tonight so it will probably make for a yucky day tomorrow. Looks like I may have to do my run on the treadmill tomorrow :( Boo, since I have 8 miles scheduled! Have a great night!!

My ring in the snow picture is the best one I've taken of it so far. It's so clear and sparkling in the natural light with the bright white background.
Glad you're having fun in the snow! I've only seen it a couple times in my life as I live in FL. but I honestly don't mind it! haha The pictures of your ring in the snow are very pretty! :) Our rings are very similar!
Oh, and that chicken chili looks so good! :)
p.s. very upset about the Bachelor last night! :( Hopefully Alli comes back.
