Super productive day!
Good evening!! I hope y’all had a wonderful day! I know I did! I sure got a lot accomplished!!
After I studied a bit and let my breakfast digest, I did my workout. I did Bobbi’s 20 minute bootcamp, followed by Whittle My Middle 2! It was a great workout! I ended up taking Sadie on a little over a mile walk later this afternoon. We had awesome weather today! Sunny and in the low 60’s!! It’s supposed to be nice like that tomorrow too. Perfect for my long run!

After getting ready, the fiancé and I went to run some errands. First, we went to Platinum Jewelers and picked out our wedding bands!! He decided on a Tungsten band, which is super durable and scratch resistant! Perfect for him!! I am getting my band made to match my engagement ring to fit right around the center stone! It’s gonna look awesome! I can’t wait to get it and be able to wear it in less than 5 months! Wohoo! After ring shopping, we went to get the fiancé some Sperry Topsiders to wear at the wedding and then to Bass Pro Shop. It was a fun outing!!
I was super hungry when I got home, so I decided to heat up some Smoky Chicken Chili leftovers from the other night.
With the last bit of Quick Cornbread on the side :( So sad this is all gone! I will definitely be making this again soon!!
And a little piece of Dark Chocolate for dessert!

After lunch, I studied all afternoon and got a lot done!! I also decided to check on flight prices for our honeymoon, and they had gone down $200 since I checked 2 weeks ago! So, I decided to book it right away!! I’m excited we have part of our honeymoon booked! Now, I just need to work on booking the hotels!!

I got a little hungry around 4:30pm, so I broke from studying to eat my favorite snack!
I seriously love this combo! Best snack ever! I’m sure y’all are totally bored with my snacks, but it’s what I crave every afternoon! Haha!!
Dinner was another pasta creation with a new side dish! Everything was great!! Here’s the recipe for the side dish:
Crostini With White Beans
Ingredients:
- 2 TBSP EVOO
- 1/2 cup chopped onion
- 1 tsp dried Rosemary
- 1/2 cup chicken stock
- 1 15oz can white beans, rinsed and drained
- salt and pepper to taste
- 1/4 cup chopped fresh parsley
- zest of 1 lemon
- 8 slices whole wheat baguette**
- Tomato, cut into 8 slices
- 1/4 cup pine nuts, toasted
- **I couldn’t find a whole wheat baguette, so I bought premade crostinis**
Directions:
Combine olive oil and onion in medium skillet. Sauté over medium heat, about 5 minutes. Add Rosemary, broth, and beans to onion. Simmer gently for 5 minutes or until broth is reduced and thickened. Remove from heat and season with salt and pepper. Fold in parsley and lemon zest. Top each baguette slice with tomato and scoop of bean mixture. Garnish with pine nuts and serve.
These were so good! The fiancé really liked them too! Sometimes he can be hard to please!
For the pasta, I just cooked some penne and elbow pasta and made a Creamy Tomato Sauce!
Just take store bought marinara, and add in chopped onion, garlic, spinach leaves, a spoonful or cream cheese, and some cayenne pepper. I also added some chicken sausage that I picked up at Whole Foods. It was delish!!

Tungsten - nice. I can't belive you teased us again with talk of wedding without pictures! your so cruel. I bet your band is amazing. Can't wait to see them together.
