Niki's Neverending Adventure

Good morning!! I am enjoying my snow day (or lack there of) so far!! Sadie must have thought we were still on for the 5 o’clock club this morning because she woke me up like clock work. Luckily, I was able to go back to bed but never really fell asleep. I laid there for about 30 minutes longer dreaming of my Baked Oatmeal creation I was going to make, then finally got up!! Much to my dismay, this is what it looked like outside:

That would be my backyard with no snow, sleet, or rain. NOTHING. Now, I  am not really into winter storms and being stuck inside, but if my class is cancelled, it better be for a reason because we have to make it up next week! So I was a little mad at the weather at this point… Luckily(or not) the weather came through and started sleeting around 7:30am. Good, class wasn’t cancelled for nothing!! Apparently it’s supposed to get worse throughout the day. We shall see. I am just hoping for some snow!! I hope everyone who has to be out in this is super careful and I am thinking about you!!

Moving on to my newest Baked Oatmeal creation: Baked Banana Blueberry Oatmeal! This was definitely a winner!! I combined:

• 1 mashed banana
• 1/3 cup oats
• 2/3 cup almond milk
• handful of fresh blueberries, I’m sure frozen would work too
• splash of vanilla

Pour into oven safe dish, sprinkle a little bit of sugar and cinnamon on top and bake for 25 minutes. I was attempting to give the top a little more crunch with the sugar.

I love how caramelized looking the sugar got! Not a huge amount of crunch but I could tell a difference than when I didn’t put cinnamon and sugar on top!

 

And of course, what oatmeal would be complete without some NM PB on top!! I forgot to photo my coffee, but y’all know what that looks like by now!!

I am planning on trying out some tea with milk this afternoon! Thanks to all the comments about that on yesterday’s post!! I will let y’all know what I think!!

Not sure what today will hold yet. I don’t really foresee me leaving the house for any reason, so probably a lot of nothing! Haha! I do have some school work I COULD do but who knows… :)
