Holy Speedster!!
Good evening!! Did everyone enjoy their Saturday?? Anyone do anything fun??
After I finished some reading for school, I headed out for a 6 mile run to test out my new shoes!! The weather was awesome! 52 degrees and cloudy!! It was bit windy but it ended up feeling good because I got toasty!! My shoes felt awesome, I love them!! They must be magic or something because I was super speedy (for me) on this run!

Holy speedster, who am I?!? This is awesome!! Who knew I could run this fast!! There was this dog that started following me at the beginning of my run that I was trying to lose the entire time!! He followed me across huge intersection, ran out in front of traffic, and all throughout shopping centers!! People were honking at me and giving me evil looks like it was my dog, but I couldn’t control the thing! It was rather embarrassing! Ha! He was running all around! He literally followed me to my door step and was gone right after I went inside. It was crazy!! I just kept hoping that he wouldn’t get hit by a car! Hopefully he found his way home!

My lunch was kind of a snack plate. I was hungry, but not starving after my run but knew I needed some fuel.
I had a pear, some bruschetta, and some carrots and crackers with hummus. Very good!!
A couple hours later I was ready for a snack…
Some tea and Quaker Crack!! Yum!!
I got this tea at Whole Foods yesterday and it was awesome!! I ended up having 2 cups!!

Dinner was some good comfort food!! Chicken Chili and Cornbread! Perfect for this rainy evening!!
Smoky Chicken Chili
Ingredients:
2 poblano chili peppers, chopped
1 red bell pepper, chopped
1 medium onion, chopped
3 garlic cloves, minced
2 TBSP EVOO
2(14.5 oz.) cans of chili style diced tomatoes
3 cups of shredded chicken
1 can navy beans, rinsed
1 can black beans,rinsed
1 can beer (I used 1.5 cups chicken broth instead)
1 envelope white chicken chili seasoning mix
Toppings: Sour cream, shredded cheese, corn, lime wedges, tortilla chips, black olives, etc.
Directions:
Sauté first 4 ingredients in EVOO in a large Dutch Oven over medium heat for 8 minutes or until veggies are tender.
Stir in the rest of the ingredients. Bring to a boil over medium-high heat. Reduce heat to low, and simmer, stirring occasionally, for 1 hour.
Serve with desired toppings.
Quick Cornbread
Ingredients:
3/4 cup cornmeal
1 1/4 cup all purpose flour
1/4 cup sugar
2 tsp baking powder
1/2 tsp salt (optional)
1 cup milk
1 egg, beaten
1/4 cup vegetable oil
2 TBSP honey (optional, use if you like sweet cornbread, it’s a Southern thing!!)
Directions:
Preheat oven to 400*. Grease 8 or 9 inch square or round pan. Blend all dry ingredients. Stir in remaining ingredients until dry ingredients are moist.
Pour batter into greased pan and bake 20-25 minutes.
Everything was delicious!! Especially the cornbread!
Topped with some Light Sour Cream and Shredded Cheddar Cheese!
This was super easy and delish! It’s a must try :)

Smokey chicken chili sounds and looks amazing!
Great job speedy! Maybe you need a random dog to follow you all the time? It seems that is warm all over the US this weekend. NYC was 48! A great time to get out and run!
I forsee myself making this cornbread very soon. Like probably tomorrow. Yum.
